Ingredients
1 cup of sweet potato (diced & mashed)
½ cup of light cheddar cheese (grated)
1½ cups of coconut flour
¾ cup of peanut butter (smooth)
¼ cup of organic honey
¼ cup of shredded carrots
4 large eggs
Method
• Boil the sweet potato until softened enough to mash
• Preheat oven to 175°
• Combine mashed sweet potato, cheddar cheese, coconut flour, peanut butter, honey, carrots and eggs in a large bowl and mix thoroughly
• Place the mixed ingredients on a cutting board and roll out to around 2 cm thick
• Using your favourite cookie cutter, cut out your cookies and place them on a prepared baking tray with baking paper
• Bake in the oven for around 25 minutes
• Allow to cool before serving
Once cooled, place in an airtight container for storage
